2 Recipes - Crockpot Chicken and Holiday Eggnog

I tried out a couple of recipes tonight - hope you like them! I could use a better food photographer, but you get the idea... I hope.

Crockpot Chicken

6 boneless, skinless chicken breasts
juice of 1/2 a lemon, mixed with a dash each of salt, pepper, paprika, and celery salt
1/2 can 98% fat free cream of mushroom soup
1/2 can 98% fat free cream of celery soup
1 large can mushrooms
1/4 c. dry white wine
whole wheat eggless noodles

Place chicken in a crockpot, mix all remaining ingredients except the noodles and pour over the chicken. Turn the chicken in the sauce til well-coated. Cook on low for 8 hours.
15 minutes before eating, cook noodles as directed on the package.

1 serving = 1 chicken breast and 1/4 cup cooked whole wheat noodles.


Holiday Egg Nog

1/4 c. Egg Beaters
1/4 c. + 1 Tbs. Splenda
3/4 c. skim milk
1/4 tsp. vanilla
dash each of nutmeg and cinnamon

Whisk Egg Beaters and Splenda til thickened and frothy. Stir in remaining ingredients and serve!

Counts as one dairy/protein serving.
