New Recipe -Peach/Blueberry Cobbler


I've been doing some experimenting. I used to do a LOT of baking (ummm... that's why the 244 pounds??) Now I'm trying to create things I can have fun making and eating.

I made this tonight and used it as a fruit serving plus my dessert. It could also be a fruit serving and a breakfast entree. (You can also substitute NS pancake mix for the whole wheat pancake mix and soy flour)

Blueberry/Peach Cobbler

1st, I nuked some frozen peaches and blueberries in a microwave safe stoneware cereal bowl (like I use for the bundt cake) with some Splenda and cinnamon - 4 minutes.
2nd, I mixed 1/8 of a cup of Whole Wheat pancake mix with 2 tablespoons soy flour, 2 tbs. SF Applesauce, 1/4 c. egg beaters, 2 tbs. splenda
3rd, I took the nuked peach/blueberries out and spread the batter on the top and put in a 350 oven for about 18 minutes.
